Maple-Nut Hubbard Squash

 Hubbard squash is a winter squash that is in season from late September until spring.

INGREDIENTS:
  • 3 pound(s) , Hubbard Squash
  • 1/2 cup(s) , Butter
  • 3/4 cup(s) , Maple Syrup
  • 0 to taste , Salt and Pepper
  • 1/2 cup(s) , Pecans Toasted and Chopped

Instructions:
Cut squash into pieces. Pare and remove seeds and fibers. Cook, covered, in boiling water until tender. Drain and mash well. Beat in butter, maple syrup, salt, and pepper. Sprinkle with pecans.
