Asian Style Turkey Salad
Submitted by: Jimmy
I really enjoy using Asian Ingredients. They have great flavor and aren't used as often. This salad is a great idea for a meal using leftover turkey.

INGREDIENTS:
  • 2 cup(s) , Leftover turkey
  • 1 tablespoon(s) , Soy Sauce
  • 1 tablespoon(s) , Dry Sherry
  • 1 tablespoon(s) , Vegetable Oil
  • 1 tablespoon(s) , Sesame Oil
  • 1 teaspoon(s) , Fresh Ginger Minced
  • 2 medium , Green Onions Thinly Sliced
  • 0 to taste , Salt and Pepper
  • 1 large , Head of Belgian Endive Separated in Spears
  • 1/4 cup(s) , Red Bell Pepper Finely Diced
  • 2 tablespoon(s) , Cilantro or Peanuts

Instructions:
Cut the turkey into small cubes, making sure to remove all fat and skin. Make a dressing of the soy sauce, sherry, oils and ginger and toss with the turkey and green onions. Season to taste with salt and pepper

Center the salad on a plate and surround with endive spears. Garnish the salad with red pepper and cilantro or peanuts.
